Easy low-carb condensed milk

This sugar-free keto substitute for traditional sweetened condensed milk requires just 4 ingredients:

  1. Heavy whipping cream,
  2. Golden Monk Fruit Sweetener,
  3. Butter, and
  4. Pure vanilla extract

Since this sugar-free milk is sweetened with monk fruit sweetener, it is low in carbs and won’t skyrocket your blood sugar. Plus, by using Lakanto’s Golden Monk Fruit Sweetener, the resulting taste of the sweetened milk is caramel-y and delicious!

Here are some answers to commonly asked questions about keto-friendly sweetened condensed milk:

What is keto sweetened condensed milk?

Traditional condensed milk is just milk without the water. As for the keto-friendly version? This keto-friendly condensed milk recipe is a sugar-free version that uses heavy cream as a base and is sweetened with net carb-free monk fruit sweetener.

What is the difference between condensed milk and evaporated milk?

Condensed milk and evaporated milk are quite similar, however, condensed milk usually includes sugar as an ingredient, and evaporated milk does not.

What can you do with prepared sweetened condensed milk?

My favorite way to use sweetened condensed milk is in my coffee. Add a tablespoon or so, mix it in, and drink it up!

Other options for how to use the sweetened milk you prepare include:

  • Drizzle atop ice cream (we love Halo Top ice cream, which we buy from our local grocery store)
  • Spread a tablespoon or two atop your favorite keto bread, like this Nut-Free Bread Loaf or these Cinnamon Sugar Bagels

Ingredient substitution options

  • Heavy Whipping Cream: Sub in full-fat canned coconut milk at a 1:1 ratio for heavy whipping cream. Note that this substitution will change the final nutrition information of the recipe.
  • Golden Monk Fruit Sweetener: Lakanto Classic Monk Fruit Sweetener can be substituted in at a 1:1 ratio.
  • Pure Vanilla Extract: I would not recommend substituting the vanilla extract in this recipe. If you don’t want to include it, simply omit it rather than replacing it.

How to make this recipe without heavy whipping cream?

Substitute in full-fat canned coconut milk in place of heavy whipping cream at a 1:1 ratio. Note that canned coconut milk is different than canned coconut cream.

Additionally, note that this substitution will change the final nutrition information of the recipe and will result in an increased amount of net carbs per serving.

How many net carbs per serving?

Each serving contains just 1.1 grams of net carbs.

The recipe itself yields 1 ½ cups of condensed milk, which amounts to approximately 12 servings in total. One serving contains 2 tbsp of condensed milk. Note that, once refrigerated, it will thicken up, which may result in slightly fewer servings.

How to store this milk?

Store in the refrigerator in a sealed glass jar. Use within 1 week.

How to make keto condensed milk

To a saucepan over medium heat, add all ingredients.

Bring mixture to a boil before reducing heat to low and simmering until mixture has slightly thickened, about 30 minutes, whisking regularly to prevent clumping.

Remove pan from heat and set aside for 10 minutes to cool slightly before pouring mixture into a blender. Pulse mixture in blender at highest speed to remove any clumps.

(Alternatively, you can pour mixture through a muslin cloth over a bowl. If you follow this method, you may need to press mixture through with the back of a spoon.)

Pour mixture into a glass jar and allow to cool at room temperature.

Once cooled, transfer jar to refrigerator to fully thicken before using.

Description

This Keto Sweetened Condensed Milk is a nut-free recipe that can be prepared in under 1 hour. This 4-ingredient sweetened milk can be used as coffee creamer, as an ice cream topping, in fat bombs, or in your favorite smoothie!


Ingredients

  • 2 cups (480 mL) heavy cream
  • ¼ cup (48g) golden monk fruit sweetener
  • 1 tbsp + 2 tsp butter (23g) 
  • 1 tsp pure vanilla extract (optional)

Instructions

  1. To a saucepan over medium heat, heat heavy cream, butter, and monk fruit sweetener. Optionally, add vanilla extract. Bring mixture to a boil before reducing heat to low and simmering until mixture has slightly thickened, about 30 minutes, whisking regularly to prevent clumping.
  2. Remove pan from heat and set aside for 10 minutes to cool slightly before pouring mixture into a blender. Pulse mixture in blender at highest speed to remove any clumps.
  3. Pour blended mixture into a glass jar and allow to fully cool at room temperature. Once cooled, transfer jar to refrigerator to fully thicken before using. Once fully chilled, the recipe will have yielded approximately 1 ½ cups of sweetened condensed milk.

Recipe Notes:
