Creamy Parmesan Sausage Soup

Description

This Creamy Parmesan Sausage Soup is low-carb, gluten-free, coconut-free, and bursting with flavors. It’s a one-pot dish that can be made and served in just 30 minutes and is sure to become one of your new favorite quick soups to prepare and eat for weeknight meals – or even for holidays or date night!


Ingredients

  • 2 tbsp (30mL) avocado oil
  • 1/2 medium-sized white onion, chopped
  • 1 lb ground mild Italian sausage
  • 1 cup (240mL) chicken broth
  • 6 oz cream cheese, softened
  • 14.5 oz can petite diced tomatoes
  • 10.75 oz can pureed tomatoes
  • 2 tsp garlic powder
  • 1 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 1/4 cup (300mL) heavy whipping cream
  • 1/4 cup (28g) shredded Parmesan cheese

Garnishes:

  • 1/4 cup shredded Parmesan cheese
  • Finely chopped fresh parsley

Instructions

  1. In a pot over medium-high heat, heat avocado oil. Add onion and cook until slightly softened and edges are golden, about 2-3 minutes, stirring occasionally.
  2. Add sausage and, using a wooden spoon, break apart into pieces. Cook until browned, stirring often. Add in chicken broth, cream cheese, diced tomatoes, pureed tomatoes, and spices and stir to combine.
  3. Reduce stovetop heat to medium, cover pot with a lid, and cook for 12 minutes, stirring occasionally.
  4. Stir in heavy cream and shredded Parmesan and cook, uncovered, for additional 3 minute
  5. Ladle soup into bowls and garnish with sprinkle of shredded Parmesan and fresh parsley.

Recipe Notes:

To Add Additional Spice: Add ½ small de-seeded jalapeno (you can also choose to keep the seeds in).
