How to make creamy Italian sausage soup

In a pot over medium-high heat, heat avocado oil. Add onion and cook until slightly softened and edges are golden, about 2-3 minutes, stirring occasionally.

Add sausage and, using a wooden spoon, break it apart into pieces. Cook until browned, stirring often. Add chicken broth, cream cheese, diced tomatoes, pureed tomatoes, and spices.

Stir to combine.

Reduce stovetop heat to medium, cover pot with a lid, and cook for 12 minutes, stirring occasionally.

Add in heavy cream and shredded Parmesan.

Stir and cook, uncovered, for an additional 3 minutes.

  • Chicken Broth: Vegetable broth or beef broth will work here. Sub in at a 1:1 ratio.
  • Heavy Whipping Cream: Combine 1/4 cup of melted butter with 3/4 cup of milk and mix thoroughly to make the equivalent of 1 cup of heavy cream. You can also use half-and-half at a 1:1 substitution ratio. If you are avoiding dairy, you can try substituting full-fat canned coconut milk at a 1:1 ratio for heavy cream, but I have not personally tested this; if you go this route, the flavor of the dish will be altered.
  • Shredded Parmesan Cheese: Shredded Pecorino Romano cheese would make an excellent alternative to Parmesan at a 1:1 ratio. You can also use grated Parmesan instead of shredded here.

Is there a way I can add some heat to this recipe?

Yes! If you like having a little spice to your food, try adding a chopped and de-seeded jalapeño to the soup. You can also add red pepper flakes and/or ground cayenne pepper. Personally, I add some chopped jalapeño almost every time I make this soup.

Can I use half-and-half in place of heavy whipping cream?

Yes, a 1:1 ratio of half and half may be used in place of heavy whipping cream in this recipe. Keep in mind that if you use half and half, the sauce will not be as thick or creamy as it would be with heavy whipping cream. This substitution will also result in a higher net carb content per serving for the soup.

How do I store keto sausage soup?

For maximum freshness, keep keto sausage soup in an airtight container for up to 3 days in the refrigerator. To reheat, heat the soup slowly on the stovetop so that the heavy cream does not separate. If you only want to reheat a single serving, cook it for 2 to 3 minutes in the microwave.

Ingredients

  • 2 tbsp (30mL) avocado oil
  • 1/2 medium-sized white onion, chopped
  • 1 lb ground mild Italian sausage
  • 1 cup (240mL) chicken broth
  • 6 oz cream cheese, softened
  • 14.5 oz can petite diced tomatoes
  • 10.75 oz can pureed tomatoes
  • 2 tsp garlic powder
  • 1 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 1/4 cup (300mL) heavy whipping cream
  • 1/4 cup (28g) shredded Parmesan cheese

Garnishes:

  • 1/4 cup shredded Parmesan cheese
  • Finely chopped fresh parsley

Instructions

  1. In a pot over medium-high heat, heat avocado oil. Add onion and cook until slightly softened and edges are golden, about 2-3 minutes, stirring occasionally.
  2. Add sausage and, using a wooden spoon, break apart into pieces. Cook until browned, stirring often. Add in chicken broth, cream cheese, diced tomatoes, pureed tomatoes, and spices and stir to combine.
