Pan-Fried Broccoli Parmesan Fritters

Description

These Pan-Fried Broccoli Parmesan Fritters include finely chopped broccoli florets with grated Parmesan cheese combined with eggs and ground sunflower seed meal to yield golden brown fritters that are seasoned to perfection. Serve these low-carb and keto fritters with Greek yogurt or sour cream for a delicious main dish, snack, or appetizer!

Instructions

  1. Bring water in a pot over high heat to a boil. Add broccoli florets to a steamer basket, cover with a lid, and steam broccoli florets until fork-tender, about 5-6 minutes. Then, using a knife, cut florets into small pieces.
  2. Add the broccoli to a mixing bowl, then add eggs, grated Parmesan cheese, ground sunflower seed meal, garlic powder, pepper, and salt.
  3. Add avocado oil to a large pan over medium heat and then, using a ¼ cup mixing cup, spoon the mixture into the pan and flatten it.
  4. Cook them for about 2-3 minutes on the first side. Check them and if you can easily flip them over without them breaking and their golden brown on that side, flip them and cook them for another 1-2 minutes. (You may need to lower the heat to medium-low if the oil starts to get too hot and is turning dark.)
  5. Serve with Greek yogurt or sour cream.

Recipe Notes:

Using Riced Broccoli Instead Of Broccoli Florets: Steaming riced broccoli (microwavable would be easiest) will speed up the prep time for making these. If you can’t find riced broccoli, mixing all the ingredients and putting it in the food processor is a time-saver also.

Refrigerator Storage: These can be kept in an airtight container in the fridge for up to 4 days. To reheat, lightly oil a skillet and cook on both sides until heated throughout. Microwave cooking is acceptable, but they will become soggier than if cooked in a pan.

Freezer Storage: Place fritters on a parchment paper-lined baking sheet, then put in the freezer for about 30 mins. Once flash frozen, store them in a freezer bag or in an airtight container. The fritters will last up to 3 months in the freezer.

Net Carbs: Per serving, these fritters contain 2.5 grams of net carbs. The recipe, as written, yields 10 servings and 1 serving is equivalent to 1 fritter. Net carbs are calculated by taking total carbs, subtracting fiber, and subtracting sugar alcohols.
