Delicious, low-carb cucumber boat snacks

I never imagined that videos sharing these Low-Carb Cucumber Boats would go viral, but after millions of views on TikTok and Instagram, these easy recipes are officially a huge hit!

The original idea originated a couple of years ago when I was looking for a quick, filling, keto-friendly snack that could be made with ingredients I had on hand.

I was craving something crunchy, creamy, salty, and filling, and landed on cucumber with cream cheese, avocado, and Everything Bagel Seasoning.

Try the Bacon & Tomato version if you’re in the mood for a BLT, or the Chive & Onion for a bagel-inspired snack. Feeling like a little heat? The Spicy Tuna will satisfy that craving! And, the Tajín variety adds the perfect amount of zing to complement the coolness of the cucumber.

The best thing about these cucumber boats is that they are SO QUICK to put together. In just minutes, you can create a delicious and satiating snack.

Low-carb cucumber boat FAQs

Here are answers to the most commonly asked question about these easy low-carb recipes:

Are there any ingredient substitution options?

  • Cucumber: Bell peppers, sweet mini peppers, or celery work great here.
  • Cream Cheese: You can substitute vegan cream cheese or, if you consume nuts, almond cream cheese at a 1:1 ratio. Subbing either of these will make the recipe dairy-free.
  • Avocado: Guacamole can be used in place of mashed avocado. Just be sure to note that the sandwich may be a little saltier than the original recipe intended if the guacamole contains added salt.
  • Salt-Free Everything Bagel Seasoning:  I buy mine on Amazon, but you can also find this seasoning at most grocery stores in the spice aisle. If you can’t find it, you can make your own seasoning at home, or you can also just use any of the components you have on hand to make a variation (like sesame seeds, poppy seeds, dried minced garlic, and/or dried minced onion).
  • Bacon: Turkey bacon would work best, or you can omit it.
  • Grape Tomatoes: Cherry tomatoes or diced fresh beefsteak tomatoes could be used instead. I would avoid using canned tomatoes, as they typically have excess juice and added salt.
  • Canned Tuna: Either canned chicken or a small portion of fresh tuna could be used instead.
  • Hot Sauce: This can be omitted completely if you don’t want a lot of heat, or you could add just a dash of cayenne pepper instead.
  • Stone-Ground Mustard: Either Dijon mustard or yellow mustard can be subbed at a 1:1 ratio, though, I will say, if you can get get Stone-Ground Mustard, I would highly recommend it. It really gives the cucumber boats a great flavor!
  • Tajín: I highly recommend picking up a bottle of this chili-lime seasoning, as it is a great topping and is very versatile. You can, however, create your own by combining chili powder, lime zest, ground cumin, garlic powder, onion powder, and salt.

How many net carbs per serving?

Depending on which version you decide to make, these cucumber boats range from 2.5 grams to 5.9 grams of net carbs per serving. The serving size is 2 boats, which is what each recipe, as written, yields. Net carbs are calculated by taking total carbs, subtracting fiber, and subtracting sugar alcohols

What diets are these recipes compliant with?

  • Keto and Low-Carb: Each serving of these cucumber boats contain only 2.5 grams to 5.9 grams of net carbs, which makes them great low-carb and keto-friendly snack options.
  • Nut-Free: There are no nuts or nut products in these cucumber boats.
  • Coconut-Free: None of these recipes contain coconut ingredients.
  • Egg-Free: Eggs are not used in these recipes.
  • Dairy-Free: These recipes can be made dairy-free by substituting the regular cream cheese for almond milk cream cheese or another dairy-free alternative (note that these substitutions will change will alter the net carb content).
  • Primal: These recipes are compliant with a primal diet.
  • Refined Sugar-Free: These recipes do not include any refined sugar.

How should the cucumber boats be stored after preparing?

  • Refrigerator Storage: While these cucumber boats are best when eaten fresh, you can pre-make them and store in an airtight container for up to 2 days.

1. Cream Cheese, Avocado, and Everything Bagel Seasoning

Serves 2 // Per Serving: 112 calories, 9.2g fat, 4.2g total carbs, 2.5g net carbs, 2.4g protein

Ingredients:

  • 1 medium cucumber, peeled, raw
  • 1 ½ oz cream cheese, softened
  • 2 tbsp mashed avocado
  • ½ tsp Salt-Free Everything Bagel Seasoning
  • Pinch of flakey sea salt

Instructions:

  1. Slice cucumber in half lengthwise. Using a spoon, de-seed cucumber and then blot both sides dry with a paper towel.
  2. Spread on cream cheese and mashed avocado before sprinkle on Everything Bagel Seasoning. If you used salt-free seasoning, sprinkle on a pinch of flakey sea salt.

2. Bacon & Tomato

Serves 2 // Per Serving: 150 calories, 11.4g fat, 7.6g total carbs, 5.9g net carbs, 4.8g protein

Ingredients:

  • 1 medium cucumber, peeled, raw
  • 1 ½ oz cream cheese, softened
  • ½ tsp Salt-Free Everything Bagel Seasoning
  • 1 tbsp + 2 tsp mashed avocado
  • 2 slices bacon, cooked, crumbled
  • 3 grape tomatoes (~20g), chopped

Instructions:

  1. Slice cucumber in half lengthwise. Using a spoon, de-seed cucumber and then blot both sides dry with a paper towel.
  2. Spread on softened cream cheese and mashed avocado. Sprinkle on Salt-Free Everything Bagel Seasoning, crumbled bacon, and chopped tomatoes.

3. Spicy Tuna

Serves 2 // Per Serving: 129 calories, 8.3g fat, 3.2g total carbs, 2.5g net carbs, 9.1g protein

Ingredients:

  • 1 medium cucumber, peeled, raw
  • 1 ½ oz cream cheese, softened
  • 2 oz canned tuna
  • ½ tsp Salt-Free Everything Bagel Seasoning
  • ½ tsp coconut aminos
  • ½ tsp hot sauce

Instructions:

  1. Slice cucumber in half lengthwise. Using a spoon, de-seed cucumber and then blot both sides dry with a paper towel.
  2. Spread on softened cream cheese then fill up each side with spoonfuls of tuna. Sprinkle on Salt-Free Everything Bagel Seasoning, then pour on coconut aminos before drizzling on hot sauce.

4. Tajín

Ingredients:

  • 1 medium cucumber, peeled, raw
  • 1 ½ oz cream cheese, softened
  • 1 tbsp + 2 tsp mashed avocado
  • ½ tsp Salt-Free Everything Bagel Seasoning
  • ¼ tsp Tajín
  • 2 tsp lemon juice or lime juice

Instructions:

  1. Slice cucumber in half lengthwise. Using a spoon, de-seed cucumber and then blot both sides dry with a paper towel.
  2. Spread on softened cream cheese and mashed avocado. Sprinkle on Salt-Free Everything Bagel Seasoning and Tajín before adding a squeeze of lemon or lime juice.

5. Chive & Onion

  • 1 medium cucumber, peeled, raw
  • 1.5 oz Chive & Onion cream cheese
  • 1 tsp stone-ground mustard
  • 1 tbsp + 2 tsp mashed avocado
  • 1 slice bacon, cooked, crumbled
  • ½ tsp Salt-Free Everything Bagel Seasoning

Instructions:

  1. Slice cucumber in half lengthwise. Using a spoon, de-seed cucumber and then blot both sides dry with a paper towel.
  2. Spread on Chive and Onion cream cheese, stone-ground mustard, and mashed avocado. Sprinkle on crumbled bacon then Salt-Free Everything Bagel Seasoning.
