Description

These Shrimp Cucumber Bites are a perfect party appetizer or afternoon snack that takes less than 30 minutes to prepare and serve! Featuring ingredients like shrimp, cajun seasoning, homemade guacamole, and cucumber slices, this recipe is low-carb, dairy-free, gluten-free, and can easily be made paleo-friendly and Whole30-compliant.


Ingredients

Shrimp and Marinade:

  • 1/4 cup (60mL) avocado oil
  • 1/4 cup (60mL) lime juice
  • 2 garlic cloves, minced
  • 1 tsp cajun seasoning
  • 3/4 tsp (~2g) powdered monk fruit sweetener (omit for paleo and Whole30)
  • 3/4 lb frozen shrimp, thawed

Guacamole:

  • 2 avocados
  • 1/2 red onion, finely chopped
  • 1 small jalapeño, finely chopped
  • 1 tbsp (15mL) lime juice
  • 2 tbsp freshly chopped cilantro
  • Pinch of salt

Cucumber:

  • 1–2 cucumbers, sliced (enough slices for all shrimp)

Garnishes (Not Included In Nutrition Info):

  • Finely chopped cilantro
  • Pinch of salt
  • Freshly-cracked pepper


Instructions

  1. Marinate Shrimp: In a mixing bowl, whisk together avocado oil, lime juice, minced garlic, cajun seasoning, and monk fruit sweetener. Add shrimp and toss to fully coat shrimp in mixture. Cover bowl with a lid or foil and transfer to the refrigerator to chill for 10 minutes (if you have extra time, you can marinate them for 30 minutes, but this is not necessary).
  2. Prepare Guacamole: While shrimp marinades, in a mixing bowl using a fork or potato masher, mash avocados. Stir in onion, lime juice, jalapeño, cilantro, and salt. Set aside.
  3. Cook Shrimp: Remove bowl from refrigerator. In a large skillet over medium heat, arrange marinated shrimp in even layer and cook until pink, about 2 ½ minutes per side. Transfer cooked shrimp to a plate and allow to cool off slightly.
  4. Final Steps: Arrange shrimp bites by spooning dollop of guacamole atop each cucumber slice then topping each with shrimp. Garnish with cilantro, salt, and pepper and serve.
