Description

These Pepper Jack Sausage Balls are a delicious and easy-to-make appetizer or breakfast that are low in carbs and can be prepared in just 30 minutes! Requiring just 5 ingredients, you can make them and have a fun party dish or weekday breakfast ready to serve with minimal time spent in the kitchen!


Ingredients

  • 1 lb ground Italian sausage
  • 1 cup (112g) shredded pepper jack cheese
  • 4 oz cream cheese, softened
  • 1/2 cup (55g) ground sunflower seed meal or almond flour
  • 3/4 tsp gluten-free baking powder

Optional Garnish (Not Included In Nutrition Info):

  • Finely chopped fresh parsley

Instructions

  1. Preheat oven to 425 degrees and line baking sheet with parchment paper.
  2. In a mixing bowl, using an electric mixer, mix together all ingredients until well-combined.
  3. Roll the sausage balls into 24 equal-sized balls and place atop prepared baking sheet.
  4. Transfer baking sheet to oven and bake until internal temperature of sausage balls reaches 160 degrees, about 13-15 minutes.
  5. Remove baking sheet from oven and, optionally, garnish with fresh parsley.

Recipe Notes:

Weight Of Each Sausage Ball Before Being Baked: I measured each of the sausage balls when rolling them and before baking them. The total mixture weighed ~735g and each ball was ~30g.
