Description

These Cucumber Tomato Bites are a quick, easy, and delicious low-carb vegetarian appetizer recipe that you can whip together in less than 30 minutes!


Ingredients

  • 2 medium-sized cucumbers
  • 6 oz cream cheese, very softened
  • 3 tbsp (45g) mayonnaise
  • 1 tbsp (15mL) hot sauce
  • 1 tbsp + 1 tsp dried dill, divided
  • 1/2 tsp garlic powder
  • 1/4 tsp dried parsley
  • 1/4 tsp onion powder
  • 1/8 tsp pepper
  • 1/8 tsp salt
  • 12 cherry tomatoes, sliced in half lengthwise

Instructions

  1. Combine softened cream cheese, mayonnaise, hot sauce, 1 tbsp dill, garlic powder, dried parsley, onion powder, pepper, and salt. Stir until smooth. Transfer bowl to refrigerator to chill while preparing cucumbers.
  2. Peel and slice each cucumber into half-inch slices to yield 24 cucumber slices.
  3. Using a 1/2 tsp teaspoon, scoop out seed from each cucumber slice. Blot cucumber slices with paper towel to remove excess moisture.
  4. Remove bowl of topping mixture from refrigerator, transfer mixture to a piping bag, and pipe out 1-2 tsp mixture atop each cucumber slice. Sprinkle remaining 1/2 tsp diill over cucumber bites before inserting tomato slices into each cucumber topping.

Recipe Notes:

Preparing In Advance: These appetizers can be prepared several hours before serving. Refrigerate until ready to serve.
