These easy-to-make popsicles are sure to be a hit during the summer months! The recipe itself is easy to throw together and the kids will love the resulting treat. With just 10 minutes of prep time, you can make the mixture and pop them into the freezer to enjoy with minimal effort required!

Steps to make these popsicles

  1. Blend: Add ingredients to blender and pulse until smooth.
  2. Pour: Pour blended mixture into popsicle molds.
  3. Freeze: Transfer popsicle molds to refrigerator to chill.

What ingredients are required?

  • Mascarpone cheese
  • Heavy whipping cream
  • Frozen strawberries
  • Frozen raspberries
  • Powdered monk fruit sweetener
  • Vanilla extract
  • Fresh raspberries

Low carb berry keto popsicles recipe FAQs

Here are answers to commonly asked questions about keto popsicles:

Are there any ingredient substitution options?

  • Mascarpone Cheese: Cream cheese or coconut cream can be substituted in at a 1:1 ratio.
  • Strawberry And Raspberry: Any fresh or frozen berry should work just fine here. Note, though, that the resulting nutrition information will change if you change the berry.
  • Powdered Monk Fruit Sweetener: If you don’t have powdered monk fruit sweetener on-hand, simply pulse granulated monk fruit sweetener in a high-speed blender or food processor until powdered. If you don’t have granulated monk fruit sweetener, erythritol, or Swerve subbed in at a 1:1 ratio will work here. Powdered stevia or liquid stevia should also work, but I cannot advise on what the exact substitution ratio should be as every brand of stevia is very different. If you want to use stevia, you will need to look up a conversion chart for that brand’s product.

Where can monk fruit sweetener be purchased?

Monk fruit sweetener is available at most grocery stores, especially specialty food stores and Costco. I personally purchase mine online from Lakanto and have it directly shipped to me.

What popsicle molds should be used?

You can make these Low-Carb Berry Cream Popsicles in whatever shaped popsicle molds that you like. I personally used mini popsicle silicone molds, which I purchased from Amazon.

If you decide to make full-size popsicles, note that the net carb content will increase slightly.

Also, you will need to purchase and use wooden popsicle sticks for each individual popsicle. I purchased these from Amazon.

How many net carbs per serving?

Each mini popsicles contains 1.7 grams of net carbs. This recipe yields 18 servings in total and one mini popsicle is equivalent to one serving.

How to store these popsicles?

Store in the freezer in an airtight container for up to 1 month.

Step-by-step instructions on how to make these keto popsicles

To a blender, add mascarpone, heavy cream, strawberries, raspberries, powdered monk fruit sweetener, and vanilla extract. Pulse until smooth.

Pour mixture into individual popsicle molds. Add chopped fresh raspberries to molds. Place wooden popsicle stick in center of individual popsicle mold cavities.

Transfer molds to freezer to chill until fully set, about 3 hours, depending on the temperature of the freezer, before removing popsicles from individual molds and serving.

These Berries and Cream Keto Popsicles are a delicious and sweet way to satisfy your craving for dessert on a hot day! Made with minimal ingredients and only 3 steps to follow, this keto popsicle recipe is very kid-friendly and easy-to-make!


Ingredients

Blend Together:

  • ¾ cup (180g) mascarpone cheese
  • 1 cup (240mL) heavy whipping cream
  • 1 cup (140g) frozen strawberries
  • ¾ cup (105g) frozen raspberries
  • 2 tbsp (24g) powdered monk fruit sweetener
  • 1 ½ tsp vanilla extract

Add To Popsicle Molds After Blending:

  • 9 fresh raspberries (~30g), roughly chopped

Materials:

  • Blender
  • Mini Popsicle Silicone Molds
  • Wooden Popsicle Sticks

Instructions

  1. To a blender, add mascarpone, heavy cream, strawberries, raspberries, powdered monk fruit sweetener, and vanilla extract. Pulse until smooth.
  2. Pour mixture into individual popsicle molds. Add chopped fresh raspberries to molds. Place wooden popsicle stick in center of individual popsicle mold cavities.
  3. Transfer molds to freezer to chill until fully set, about 3 hours, depending on temperature of freezer, before removing popsicles from individual molds and serving.

Recipe Notes:

Mascarpone Cheese Substitution: Cream cheese or coconut cream can be substituted in at a 1:1 ratio.

To Make This Recipe Dairy-Free: Use coconut cream (from a can) instead of mascarpone cheese and unsweetened coconut milk (from a container) instead of heavy whipping cream.

Strawberry And Raspberry Substitutions: Any fresh or frozen berry should work just fine here. Note, though, that the resulting nutrition information will change if you change the berry.

Powdered Monk Fruit Sweetener Substitution: If you don’t have powdered monk fruit sweetener on-hand, simply pulse granulated monk fruit sweetener in a high-speed blender or food processor until powdered.
