Berries and Cream Keto Popsicles

These Berries and Cream Keto Popsicles are a delicious and sweet way to satisfy your craving for dessert on a hot day! Made with minimal ingredients and only 3 steps to follow, this keto popsicle recipe is very kid-friendly and easy-to-make!

Ingredients

Blend Together:

  • ¾ cup 180g mascarpone cheese
  • 1 cup 240mL heavy whipping cream
  • 1 cup 140g frozen strawberries
  • ¾ cup 105g frozen raspberries
  • 2 tbsp 24g powdered monk fruit sweetener
  • 1 ½ tsp vanilla extract

Add To Popsicle Molds After Blending:

  • 9 fresh raspberries ~30g, roughly chopped

Materials:

  • Blender
  • Mini Popsicle Silicone Molds
  • Wooden Popsicle Sticks

Instructions

  • To a blender, add mascarpone, heavy cream, strawberries, raspberries, powdered monk fruit sweetener, and vanilla extract. Pulse until smooth.
  • Pour mixture into individual popsicle molds. Add chopped fresh raspberries to molds. Place wooden popsicle stick in center of individual popsicle mold cavities.
  • Transfer molds to freezer to chill until fully set, about 3 hours, depending on temperature of freezer, before removing popsicles from individual molds and serving.

Notes

Mascarpone Cheese Substitution: Cream cheese or coconut cream can be substituted in at a 1:1 ratio.
To Make This Recipe Dairy-Free: Use coconut cream (from a can) instead of mascarpone cheese and unsweetened coconut milk (from a container) instead of heavy whipping cream.
Strawberry And Raspberry Substitutions: Any fresh or frozen berry should work just fine here. Note, though, that the resulting nutrition information will change if you change the berry.
Powdered Monk Fruit Sweetener Substitution: If you don’t have powdered monk fruit sweetener on-hand, simply pulse granulated monk fruit sweetener in a high-speed blender or food processor until powdered. If you don’t have granulated monk fruit sweetener, erythritol, or Swerve subbed in at a 1:1 ratio will work here. Powdered or liquid stevia should also work, but I cannot advise on what the exact substitution ratio should be as every brand of stevia is very different. If you want to use stevia, you will need to look up a conversion chart for that brand’s product.
Net Carbs: One mini popsicle contains 1.7 grams of net carbs.
Storage: Store popsicles in the freezer in an airtight container for up to 1 month.
