  • Preheat Oven and Prep Baking Dish: Preheat the oven to 400 degrees F and coat a 9×13-inch baking dish with nonstick cooking spray.
  • Cook Sausage: To a large skillet over medium-high heat, add sausage, and break it apart with a wooden spoon. Cook sausage until browned, about 5 minutes. Remove pan from heat and, using a slotted spoon, transfer browned sausage to a prepared baking dish and set aside. (Alternatively, carefully drain grease into a jar or container and then pour browned sausage into the baking dish.)
  • Prepare Egg Mixture: To a large bowl, add eggs, shredded cheddar, shredded mozzarella, heavy cream, salt, and pepper. Using an electric mixer, mix until well-combined. Pour the egg mixture atop the browned sausage in the baking dish.

How should the prepared egg casserole be stored?

Store the casserole in an airtight container in the refrigerator for up to 3 days.

Can this sausage breakfast casserole be baked and then frozen?

Yes, after the casserole has been baked and cooled off, slice it into individual servings. You can individually wrap each slice in plastic wrap if you want to be able to only thaw one slice at a time. Or, transfer all of the slices to a storage bag and squeeze out as much air as possible. Transfer the bag to the freezer and freeze for up to 3 months. When you’re ready to eat, thaw overnight in the refrigerator and then bake at 400 degrees until warmed throughout, which may take anywhere from 15-30 minutes.

Can this breakfast casserole be made the day before?

Yes, this casserole stores really well to be eaten the next day. After cooking and cooling, cover the baking dish with plastic wrap or aluminum foil. To reheat, preheat the oven to 400 degrees F and remove the baking dish from the refrigerator. Cover the baking dish with foil to avoid excess browning while it reheats in the oven. Transfer the baking dish to the preheated oven and bake until warmed throughout, which should take about 10-15 minutes, then slice and serve. Alternatively, reheat individual slices in the microwave in 30-second increments until warmed throughout.

Can I prepare everything in advance, but wait to bake the casserole until tomorrow?

Yes, once the browned sausage and egg mixture is in the baking dish, cover the dish with plastic wrap and refrigerate overnight. When you’re ready to cook it, preheat the oven to 400 degrees F and remove the baking dish from the fridge. Cook the casserole according to the recipe instructions, but be aware that you may need to bake it slightly longer than 35 minutes.

Description

Ingredients

  • 1 pound ground Italian sausage
  • 8 large eggs
  • 1 cup (112 grams) shredded sharp cheddar cheese
  • 1/2 cup (56 grams) shredded mozzarella cheese
  • 1/2 cup (120 milliliters) heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Optional Garnish:

  • 1 Tablespoon finely chopped fresh chives


Instructions

  1. Preheat Oven and Prep Baking Dish: Preheat oven to 400 degrees F and coat a 9×13-inch baking dish with nonstick cooking spray.
