Description

These 2-Ingredient Low-Carb Chocolate And Sunflower Seed Bites are so easy to make and can be prepared and ready to enjoy in just 30 minutes! They are low-carb, keto-friendly, gluten-free, dairy-free, and vegan!


Ingredients

  • 1 cup (120g) raw sunflower seeds
  • 6 oz Lakanto monk fruit-sweetened chocolate chips


Instructions

  1. In a pan over medium heat, toast sunflower seeds until lightly golden brown. Set aside.
  2. In a microwave-safe bowl, melt chocolate chips in 30-second increments, stirring after each cook time.
  3. To bowl of melted chocolate, add sunflower seeds and mix until well-combined. Then, using a spoon, scoop mixture into silicone mold cavities.
  4. Transfer silicone mold to freezer to chill until bites have solidified, about 20 minutes.
  5. Pop each bite out of silicone mold cavities, then serve.

Recipe Notes:

Net Carbs: Per serving, this recipe contains 4.3 grams of net carbs. The recipe, as written, yields 10 servings and 1 serving is equivalent to 1 chocolate bite. I have made this recipe multiple times and it can yield up to 12 bites so, to decrease net carb content per serving, split the mixture to yield 12 bites rather than 10. Net carbs are calculated by taking total carbs, subtracting fiber, and subtracting sugar alcohols.
