The GOLDEN smoothie… no pun intended
You may have noticed “golden smoothies” gaining popularity on the web. They have become the go-to drink of choice, primarily for their awesome ingredients and health benefits (the wonders of turmeric, am I right?!).
Many are made with ingredients not quite suitable for the keto diet, so I thought I would put together a version that’s as low in carbs as it is delicious. It’s a “golden” smoothie, both in theory AND reality!
Minimal time commitment is required to make this keto golden smoothie
When I say “no time,” I mean it. If you have time to brush your teeth, you have time to make this smoothie! It requires just FIVE minutes of prep time, but it will most likely take even less.
You’ll probably spend more time gathering ingredients than actually making this yummy drink, which makes the ultimate breakfast choice when you’re running late for work and need something to sip on during your commute!
Only a couple of kitchen tools are needed
To make this keto golden smoothie, all you need is a blender and a couple of measuring cups! I love my smoothie blender because it mixes very consistently and blends everything really well.
As for measuring materials, you will need the following measurement cups and spoons:
- 1/8 tsp
- 1/2 tsp
- 3/4 tsp
- 1 tbsp
- 1/4 cup
These are the measuring cups and spoons that I love and use every single day. They are stainless steel, dishwasher safe, and never rust or bend. Much better than the old plastic measuring utensils that I used to use!
Keto golden smoothie net carbs per serving
This keto golden smoothie has 4.4 grams of net carbs per serving. It will fit perfectly into your daily net carb allowance, regardless of whether or not your ultimate goal is to reach and maintain a state of ketosis! I love that this delicious drink is so easy to fit into my diet.
This recipe yields one cup, which is equal to one serving. To make an additional serving or two, simply double or triple the ingredient amounts as desired.
You can make this recipe coconut-free
Though I LOVE that this is a coconut smoothie, I know that some people prefer to (or altogether need to due to allergies) stay away from anything coconutty. If that’s you, don’t worry. You can EASILY make this recipe coconut-free!
First, altogether omit the MCT oil powder as it is derived from coconut.
To do so, use heavy cream in place of the canned coconut cream. This recipe will work well if the heavy cream is used at a 1:1 ratio, meaning you will need 1/4 of a cup of heavy cream and then you can altogether omit the canned coconut cream.
Note: If you use heavy cream in place of coconut cream, the nutrition facts will change.
Using stevia or other keto-friendly sweeteners in smoothies
I use Lakanto Classic Monk Fruit Sweetener for this ginger smoothie, but other options will work too. If you have Lakanto’s Golden version on hand, you can use that at a 1:1 ratio and you will achieve the same flavor.
Prefer to use erythritol, Truvia, or Swerve? Feel free to do so, also at a 1:1 ratio.
If stevia is your sweetener of choice, that will work too; just be sure to look on the brand’s website to determine the correct conversions. This is because stevia a lot more potent than monk fruit sweetener, so you will need less stevia, regardless if the stevia is powdered or liquid.
If you’re unsure about how much stevia to use, I suggest starting with a really small amount, taste testing, then adding more stevia based on your sweetness preferences.
Storing your keto smoothie
If you wind up with some leftovers in the blender or decide to batch-make this golden smoothie, be sure to store it in an airtight glass jar, like a mason jar, in the refrigerator. This will ensure the smoothie stays fresh and flavorful.
Enjoy your smoothie within 2 days for ultimate freshness and flavor!
