Growing up, Cinnamon Toast Crunch was one of my all-time favorite morning breakfast cereals, so creating a low-carb version was a must!

Though at first thought it may sound like cereal is off-limits for those who follow a ketogenic diet, that’s actually not the case! With the right ingredients, keto dieters can happily enjoy a serving to start their day off on the right foot!

How to make cinnamon crunch keto

Most know traditional cinnamon toast crunch to be a high-carb cereal that tastes great, mainly because of all the added refined sugar. Though we don’t use sugar in this recipe, we use ingredients that taste just as delicious and are keto-friendly.

As the cereal base, we use pork rinds! If you’re totally confused on why we use pork rinds in a breakfast cereal recipe of all things, just stick with me! Trust me when I say that the resulting cereal tastes absolutely NOTHING like pork rinds.

When broken up into small pieces, pork rinds have a crunchy consistency that’s very reminiscent of cereal. As an ingredient that contains 0 grams of net carbs, pork rinds make a really wonderful keto cereal base!

To sweeten this cereal, we’ll be using monk fruit sweetener. Monk fruit sweetener adds zero grams of net carbs and it’s zero glycemic, gluten-free, vegan, and tastes just like traditional sugar!

In addition to pork rinds and monk fruit sweetener, you’ll need unsalted butter, heavy whipping cream, cinnamon, and coconut milk!

Keto cereal ingredient alternatives

Do you want to customize this cereal to make it your own? Below are some substitution options that may work for you:

  • Golden Monk Fruit Sweeter: In place of Golden Monk Fruit Sweetener, you can use Classic Monk Fruit Sweetener, erythritol, or Swerve. Sub in any of these at a 1:1 ratio.
  • Unsweetened Coconut Milk: If you don’t like coconut milk or if you have a coconut allergy or intolerance, you can use heavy cream in its place (in addition to the cream that the recipe calls for). Alternatively, if you do not have a nut allergy or nut intolerance, you can sub in unsweetened almond milk for coconut milk.
  • Unsalted Butter: Coconut oil should work just fine in place of unsalted butter here; I have not, however, tested this substitution, but did want to offer it as an option since this substitution is often successful in recipes such as this one.

You can purchase monk fruit sweetener at many grocery stores now! If, however, you cannot locate it in your local store, I would suggest purchasing it online directly from Lakanto. How should this cereal be stored?

Store at room temperature in an airtight container and enjoy within 1 day.

How to prepare this easy nut free keto cereal recipe

To begin, melt and brown butter in a saucepan over medium heat and stir occasionally with a rubber spatula. This should take about 5-7 minutes.

Next, pour in the heavy cream and monk fruit sweetener. Stir the ingredients together and cook until desired caramel consistency is reached, about 2-3 minutes. Remove the saucepan from the heat.

To the saucepan, add the pork rinds and cinnamon and mix until fully coated in caramel. Pour the caramel-coated pork rinds into a mixing bowl and transfer the bowl to the refrigerator to chill for about 30 minutes.

Divide the cereal amongst 2 bowls.

This Keto Cinnamon Toast Crunch Cereal is a low-carb breakfast option that the entire family will enjoy! Made with pork rinds and sweetened with monk fruit sweetener, this cinnamon caramel cereal tastes just like the cereal you grew up eating!


Ingredients

  • ¼ cup (2 oz) unsalted butter
  • ¼ cup (60 mL) heavy whipping cream
  • 2 tbsp (24g) golden monk fruit sweetener
  • 60g pork rinds, broken into ½”-1” pieces
  • ½ tsp cinnamon
  • 2 cups (480 mL) unsweetened coconut milk (from carton)


Instructions

  1. In a saucepan over medium heat, melt and brown butter, which should take about 5-7 minutes, stirring occasionally with a rubber spatula. Pour in heavy cream and monk fruit sweetener, stir ingredients together, and continue to cook until desired caramel consistency is reached, about 2-3 minutes. Remove saucepan from heat.
  2. To saucepan, add pork rinds and cinnamon and mix until fully coated in caramel. Pour caramel-coated pork rinds into a mixing bowl and transfer bowl to refrigerator to chill for 30 minutes.
  3. Divide cereal amongst 2 bowls and serve with 1 cup (240 mL) coconut milk per bowl.

Recipe Notes:

Unsalted Butter Substitution: Coconut oil should work just fine in place of unsalted butter here; I have not, however, tested this substitution, but did want to offer it as an option since this substitution is often successful in recipes such as this one.

Golden Monk Fruit Sweeter Substitution: In place of Golden Monk Fruit Sweetener, you can use Classic Monk Fruit Sweetener, erythritol, or Swerve. Sub in any of these at a 1:1 ratio.

    Sounds sooo good but that’s a lot of calories , is 695 really right ?

      Yep, that is the correct amount; the pork rinds are high in calories, which come from fat and protein, which makes this a very satiating meal.
