Though at first thought it may sound like cereal is off-limits for those who follow a ketogenic diet, that’s actually not the case! With the right ingredients, keto dieters can happily enjoy a serving to start their day off on the right foot!

Most know traditional cinnamon toast crunch to be a high-carb cereal that tastes great, mainly because of all the added refined sugar. Though we don’t use sugar in this recipe, we use ingredients that taste just as delicious and are keto-friendly.
As the cereal base, we use pork rinds! If you’re totally confused on why we use pork rinds in a breakfast cereal recipe of all things, just stick with me! Trust me when I say that the resulting cereal tastes absolutely NOTHING like pork rinds.
When broken up into small pieces, pork rinds have a crunchy consistency that’s very reminiscent of cereal. As an ingredient that contains 0 grams of net carbs, pork rinds make a really wonderful keto cereal base!
To sweeten this cereal, we’ll be using monk fruit sweetener. Monk fruit sweetener adds zero grams of net carbs and it’s zero glycemic, gluten-free, vegan, and tastes just like traditional sugar!
In addition to pork rinds and monk fruit sweetener, you’ll need unsalted butter, heavy whipping cream, cinnamon, and coconut milk!

How to prepare this easy nut free keto cereal recipe
To begin, melt and brown butter in a saucepan over medium heat and stir occasionally with a rubber spatula. This should take about 5-7 minutes.
Next, pour in the heavy cream and monk fruit sweetener. Stir the ingredients together and cook until desired caramel consistency is reached, about 2-3 minutes. Remove the saucepan from the heat.
To the saucepan, add the pork rinds and cinnamon and mix until fully coated in caramel. Pour the caramel-coated pork rinds into a mixing bowl and transfer the bowl to the refrigerator to chill for about 30 minutes.
Divide the cereal amongst 2 bowls.
