These No-Bake Sunflower Seed Butter Chocolate Bars come together without turning on the oven. Ground sunflower seed meal, powdered monk fruit sweetener, sunflower seed butter, melted butter, and vanilla get mixed into a thick, toasty base and spread into a parchment-lined 8×8-inch pan, then covered with melted chocolate that sets firm in the freezer in 20 minutes. Sunflower seed butter stands in for peanut butter here, so the bars are nut-free, and the pan slices into 9 bars in about 30 minutes.

- No oven, no baking, and one 8×8-inch pan to wash.
- About 30 minutes from start to sliced, and most of that is hands-off freezer time.
- Sunflower seed butter gives the base a rich, toasty flavor without any peanut butter.
- The chocolate layer sets firm, so the bars hold their shape and slice cleanly.
Frequently asked questions
What is ground sunflower seed meal?
It is sunflower seeds ground to a fine, flour-like meal, and it makes up the body of the bars. The recipe calls for 3/4 cup, which is 83 grams, so weighing it is the most accurate way to measure.
Do I really need an electric mixer?
The recipe calls for one. The sunflower seed butter and seed meal make a thick, stiff base, and an electric mixer is what gets it fully combined. A rubber spatula is used to transfer the mixture into the pan.
How do I melt the chocolate chips without scorching them?
Melt them in the microwave in 30-second increments, checking between each 30-second increment. In my microwave that takes about a minute total for the 1/2 cup of chips.
How long do the bars need in the freezer before I can slice them?
Twenty minutes. Once the chocolate layer is set firm, cut the pan into 9 bars and serve.
