These Keto Lemon Poppy Seed Muffins are a sweet, tart, and low-carb dessert that everyone will love!

I’ve recently done a lot of recipe testing for low-carb desserts that feature lemon. I just love the flavor combination of a baked good with the tartness of citrus, all wrapped into one delicious bite!

Of course, a Lemon Poppy Seed recipe was necessary! The result? These muffins that are soft, sweet, and simple to make!

We prepped a double batch over the weekend, stored them in an airtight container in the refrigerator, and enjoyed one every morning with a cup of cold brew coffee on the side. Basically, my personal version of low-carb breakfast HEAVEN!

Nut-Free Keto Lemon Poppy Seed Muffins Recipe

Like my Low-Carb Chocolate Chip Muffins, this muffin recipe is also nut-free!

Instead of baking with almond flour like I do in many of my keto and low-carb baked good recipes, this recipe uses coconut flour, making it a perfect option for those who follow a ketogenic diet and also have a nut allergy or intolerance.

Description

These Keto Lemon Poppy Seed Muffins are a deliciously tart, low-carb dessert option that everyone will love! This recipe is keto, low-carb, nut-free, gluten-free, grain-free, vegetarian, refined-sugar-free, and contains only 1g of net carbs per serving!


Ingredients

  • 4 eggs
  • 2/3 cup classic monk fruit sweetener (use code “REALBALANCED” for 20% off Lakanto products)
  • 2 tbsp heavy whipping cream
  • 1 oz cream cheese, softened
  • 1 tbsp lemon zest
  • 2 tsp lemon extract
  • 1/2 tsp pure vanilla extract
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter
  • 1/2 cup + 2 tbsp coconut flour
  • 1 tbsp poppy seeds

Additional Materials

  • Muffin tin
  • Muffin liners


Instructions

  1. Preheat oven to 350 degrees and line muffin tins with 12 muffin liners.
  2. To a mixing bowl, add eggs, classic monk fruit sweetener, heavy whipping cream, cream cheese, lemon zest, lemon extract, vanilla extract, cream of tartar, baking soda, and salt. Mix with an electric mixer until ingredients are combined.
  3. In a microwave-safe bowl, melt butter.
  4. To mixing bowl, add melted butter, coconut flour, and poppy seeds. Mix with an electric mixer until fully incorporated.
  5. Spoon dough into individual muffin liners.
  6. Bake until muffin tops are slightly golden, about 23-25 minutes.

    Hi, I was wondering if you could advice me on the timings to convert these into a layered cake rather than muffins? My partner and I have recently bought a house and I wanted to bake something in celebration!

      I haven’t made this into a cake, but that would be delicious! This recipe for a lemon poppyseed bundt cake may be a good option for you. If you need for it to be nut-free, you should be able to sub in ground sunflower seed meal for the almond flour.

    My husband loves these and he’s not following any diet! The recipe is great. I made these in the small muffin tins. Used spray oil to coat inside of tin. Baked for 13-15 min. Let cool slightly, ran knife around edge before removing. Perfect bites without over indulging. Can always go back for another one!

    I’m not full keto and I use spelt flour quite a bit. Do you know how I could use spelt instead of coconut flour?

      Unfortunately, I’m not sure at all as I’ve never worked with spelt flour. I will say that coconut flour is quite dense, so if spelt flour is similar to almond flour, it will not work.
