One of my favorite kinds of holiday desserts to make is gingerbread cookies! I just love how fun and versatile they are and how they can be cut into virtually any shape. Their dough and texture make them great for shaping and decorating, more so than many other types of cookies. Not to mention, they taste absolutely delicious!

So you’re thinking gingerbread cookies, but you’re following a keto diet and traditional gingerbread cookies contain high-carb ingredients… Well, say no more because this keto-friendly gingerbread recipe is going to be a perfect addition to your holiday baking plans!

But with the recipe for these keto ginger cookies on-hand, you don’t have to worry about straying from your diet or lifestyle or going over your daily net carb budget. These will perfectly fit in your holiday bake-off parties, where you’re bound to impress them with just how tasty these are.

These bite-sized treats are a wonderful low-carb option, as they contain just 3.8g of net carbs per serving. One serving is 4 gingerbread cookies.

Keto cookies made without refined sugar

When making this recipe, I was able to keep these cookies low carb by cutting out the use of traditional, refined sugar. Instead, I use Lakanto Monk Fruit Sweetener.

If you don’t already know, monk fruit sweetener is my everyday go-to when it comes to baking sweets or anything that calls for sugar. It has ZERO grams of net carbs, is GMO-free, and it doesn’t spike blood sugar! It substitutes in for sugar with a 1:1 ratio, meaning you don’t have to come up with new measurements to achieve the same level of sweetness. I love that the ingredients and spices in this recipe come together to create that rich, familiar taste of gingerbread cookies many of us grew up on. This recipe uses ingredients like No-Sugar-Added SunButter, monk fruit sweetener, ground sunflower seed meal, and heavy whipping cream. There are also a variety of spices such as cinnamon, nutmeg, allspice, cloves, and the star of the show, ginger!

Did you know ginger actually has A LOT of benefits? It contains gingerol, which contains anti-inflammatory and antioxidant properties. Closely related to turmeric, this spice is great for treating nausea, muscle pain, blood sugar, and heart problems.

This recipe takes less than 3 hours to prepare from start to finish, including bake time, and the whole process is sure to become one of your new favorite holiday traditions!

Storage suggestions for keto cookies

After baking, store these cookies in an airtight container on your countertop for up to 4 days, or store them in the refrigerator to extend their shelf-life to one week!

How to make keto gingerbread cookies 

In a large mixing bowl, whisk together ground sunflower seed meal, monk fruit sweetener, cinnamon, ginger, nutmeg, cream of tartar, baking soda, xanthan gum, allspice, cloves, salt, and pepper.

Whisk dry ingredients together.

Add eggs, SunButter, and heavy cream.

Mix with an electric mixer until well-combined. Cover bowl with foil or plastic wrap, transfer to refrigerator, and chill for 2 hours.

After dough has chilled, preheat oven to 325 degrees and line baking sheet with parchment paper. Spray two pieces of parchment paper with nonstick cooking spray. Lay one piece down, spray side up, placing chilled dough in center.

Lay the other piece of parchment paper down, spray side down so it touches the dough, and lightly press down.

Using a rolling pin, roll dough until it is an even layer, being careful to not roll dough too thin.

Using cookie cutters, cut dough into desired cookie shape.

Transfer cut cookies to prepared baking sheet.

Whisk remaining egg in a small bowl. Using a pastry brush, brush cookies with egg wash.

Are you looking for the perfect keto Christmas cookies that are low carb and perfect for the holiday season? These low carb nut free keto gingerbread cookies will hit the spot!


Ingredients

  • 1 ¾ cup (192g) ground sunflower seed meal
  • ½ cup (96g) classic monk fruit sweetener
  • 1 tbsp cinnamon
  • 1 tbsp ground ginger
  • 2 tsp ground nutmeg
  • 1 tsp cream of tartar
  • ½ tsp baking soda
  • ½ tsp xanthan gum
  • ¼ tsp ground allspice
  • ¼ tsp ground cloves
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 3 eggs, divided
  • 1 tbsp (16g) No-Sugar-Added SunButter, softened
  • 1 tbsp (15mL) heavy whipping cream

Instructions

  1. In a large mixing bowl, whisk together ground sunflower seed meal, monk fruit sweetener, cinnamon, ginger, nutmeg, cream of tartar, baking soda, xanthan gum, allspice, cloves, salt, and pepper. Add 2 eggs, SunButter, and heavy cream and mix with an electric mixer until well-combined. Cover bowl with foil or plastic wrap, transfer to refrigerator, and chill for 2 hours.
  2. After dough has chilled, preheat oven to 325 degrees and line baking sheet with parchment paper.
  3. Spray two pieces of parchment paper with nonstick cooking spray. Lay one piece down, spray side up, placing chilled dough in center. Recipe Notes:

If Dough Becomes Too Soft While Using Cookie Cutters: Transfer rolled dough from parchment paper back to mixing bowl and return bowl back to refrigerator to chill again.

Storage: After baking, store these cookies in an airtight container on your countertop for up to 4 days, or store them in the refrigerator to extend their shelf-life to one week.

      I haven’t tried it because of my allergies, but almond flour is typically a 1:1 sub for ground sunflower seed meal!

    Curious about the SunButter – Soften it? Mine doesn’t seem to be hard or firm, so what do you mean? I also don’t keep it in the fridge. Thank you!

      Great question! “Softened” means that the SunButter is creamy and easily spreadable. I use this term since, even when jars are not refrigerated, depending on the temperature of your house (especially in winter), the SunButter may be a little too dense and more challenging to incorporate into your dough mixture. If necessary, I put some SunButter in a microwave-safe bowl and microwave for 10-15 seconds to slightly soften. Hope that helps! 🙂
