To help curb my relentless craving for keto baked goods, these low carb cinnamon roll muffins are perfect. These muffins pack the perfect sweet punch to get my cravings under control. Plus, they only require 40 minutes in TOTAL to whip together!

Long story short: If you like anything cinnamon flavored, you’re going to LOVE these keto-friendly muffins!

Muffins vs. Cupcakes: What’s the difference?

Many people love muffins because they’re essentially a cupcake that doubles as an “acceptable” breakfast food! Though those believers do have a point, muffins are way different than their cupcake counterparts.

For starters, muffin “bread” is typically a lot heavier than cupcakes. The ingredients used in traditional cupcakes (often sugar, vegetable oil, etc.) are beaten longer and together create a fluffier, lighter texture. Cupcakes are typically much sweeter, too!

Key cinnamon muffin ingredients

From start to finish, this recipe is full of absolutely delicious ingredients. The muffins themselves use ingredients like coconut flour, ground ginger, vanilla extract, and of course, cinnamon! Plus, you can’t forget about the cream cheese frosting!

For this recipe, there’s one ingredient that stands out among the rest and proves itself as MVP: Lakanto Monk Fruit Sweetener.

Monk fruit sweetener is tasty, net carb-free, and easy to incorporate into recipes (you can add it to recipes that call for sugar at a 1:1 ratio).

Lakanto makes two versions: Classic and Golden. This recipe uses the Classic version, though you can sub in Golden at a 1:1 ratio!

Net carbs in monk fruit sweetener

Both the Classic and Golden varieties of Lakanto Monk Fruit Sweetener contain 0g of net carbs. On the nutrition label (see photo below), you will see a total carb content of 4g and a sugar alcohol content of 4g per serving.

To calculate net carbs, all you need to do is subtract fiber and sugar alcohol from total carbs; so, in this case, you would take 4g total carbs – 4g sugar alcohol = 0g net carbs.

There are a few tools that will make your cinnamon muffin making a breeze! To make your baking process as simple as possible, be sure to have these materials ready before you begin:

  • Muffin tin
  • Muffin liners
  • Mixing bowl
  • Electric mixer
  • Food processor
  • Rubber spatula

Net carbs in cinnamon muffins

These keto cinnamon roll muffins are a low-carb dream come true. They were created specifically to serve as a sweet treat for a low-carb diet, and they definitely do NOT disappoint!

This recipe yields 12 muffins and each muffin contains just 1.5g of net carbs!

Substitution option

To make these muffins, the main ingredients cannot be changed, but you can substitue in a different keto sweetener for classic monk fruit sweetener:

  • Classic Monk Fruit Sweetener Substitution: You can sub in golden monk fruit sweetener, erythritol, or Swerve for classic monk fruit sweetener at a 1:1 ratio.

Storage tips for this keto cinnamon roll muffin recipe

Store these cinnamon roll muffins in an airtight container in your refrigerator and eat within 4 days.

When you’re ready to eat one, simply reheat in the microwave for 30 seconds to soften.

How to avoid soggy muffins

In your storage container, line the bottom with a paper towel. Place your muffins inside, and then carefully place a second paper towel on top of them.

The paper towels will soak up any moisture, preventing your muffins from getting soggy!

How to make keto cinnamon roll muffins

Preheat oven to 350 degrees and line muffin tin cavities with muffin liners. To a mixing bowl, add melted butter, eggs, egg white, and vanilla extract and, on medium-low speed, mix together using an electric mixer.

Add monk fruit sweetener, coconut flour, cinnamon, cream of tartar, baking soda, ginger, and salt.

On medium then high speed, mix again with an electric mixer.

Spoon mixture into muffin liners.

Transfer muffin tin to oven and bake muffins until a toothpick can be poked into the center and come out cleanly about 20-25 minutes. Remove muffin tin from the oven and set aside to allow muffins to cool slightly.

Meanwhile, to a food processor, pulse monk fruit sweetener until powdered. To a small mixing bowl, combine ingredients and mix with a spoon until thoroughly incorporated.

Using a spatula, frost individual muffins.

Serve muffins warm with a sprinkle of cinnamon atop cream cheese frosting.

How to serve keto cinnamon muffins

These muffins taste amazing when garnished with a bit of extra cinnamon! I like to use 1/16 tsp and sprinkle it on top of the cream cheese frosting for added cinnamon flavor.

Description

This delicious keto cinnamon roll muffin recipe is perfect and takes just 40 minutes to whip together. These muffins are keto-friendly, low-carb, gluten-free, grain-free, and nut-free! Perfect for any time of year, these muffins will be loved by the whole family!


Ingredients

Muffins:

  • ½ cup (4 oz) unsalted butter, melted
  • 4 eggs
  • 1 egg white
  • 1 tsp pure vanilla extract
  • ⅔ cup (128g) classic monk fruit sweetener
  • ½ cup + 2 tbsp (70g) coconut flour
  • 1 tbsp cinnamon
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • ¼ tsp ground ginger
  • ¼ tsp salt

Frosting:

  • 3 tbsp (36g) classic monk fruit sweetener
  • 5 oz cream cheese, warmed
  • ½ tsp pure vanilla extract

Optional Garnish:

  • 1/16 tsp cinnamon


Instructions

  1. Muffins: Preheat oven to 350 degrees and line muffin tin cavities with muffin liners.
  2. To a mixing bowl, add melted butter, eggs, egg white, and vanilla extract and, on medium-low speed, mix together using an electric mixer. Add monk fruit sweetener, coconut flour, cinnamon, cream of tartar, baking soda, ginger, and salt and, on medium then high speed, mix again with electric mixer. Spoon mixture into muffin liners.
  3. Transfer muffin tin to oven and bake muffins until toothpick can be poked into center and come out cleanly, about 20-25 minutes. Remove muffin tin from oven and set aside to allow muffins to cool slightly.
  4. Frosting: Meanwhile, to a food processor, pulse monk fruit sweetener until powdered. To a small mixing bowl, combine ingredients and mix with a spoon until thoroughly incorporated. 
  5. Final Steps: Using a spatula, frost individual muffins. Serve muffins warm with sprinkle of cinnamon atop cream cheese frosting.

    Do you have the nutrition details omitting the frosting? I know that’s the best part, but due to lack of time, I’m having a couple without the good stuff at work today. I’ll frost the rest later 🙂

      Hi, Beth! The macros for the muffins (per 1 muffin) without frosting are: 110 calories, 9.7g fat, 13.4g total carbs (1.1g net carbs), and 2.9g protein.

      I wouldn’t. If you are looking for a dairy-free sub for butter, I would suggest using coconut oil.
