This Lemon Garlic Spinach is one of the easiest one-pot side dishes you can prepare in just 10 minutes – or less! Minimal ingredients required, this low-carb recipe is delicious and a perfect pairing to go alongside your favorite keto-friendly main dish.

How to make lemon garlic spinach

In a very large pot or Dutch oven over medium heat, heat oil. Add minced garlic and cook until fragrant, about 1 minute.

Add spinach, salt, and pepper then cover pot with lid and cook until spinach has slightly wilted, about 1 ½ minutes.

Remove lid, stir in lemon juice, and cook uncovered until spinach has fully wilted, about an additional 30 seconds.

Using tongs, transfer spinach to a bowl and garnish with red pepper flakes and freshly-cracked black pepper.

Ingredients

  • 1/4 cup (60mL) avocado oil
  • 12 cups (~336g) fresh spinach
  • 1 tbsp (15g) minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp + 1 tsp lemon juice

Garnishes:

  • 1/8 tsp red pepper flakes
  • 1/8 tsp freshly-cracked pepper

Instructions

  1. In a very large pot or Dutch oven over medium heat, heat oil. Add minced garlic and cook until fragrant, about 1 minute.
