Meal Prep Firecracker Ground Chicken
Ingredients
- 20 oz 2 bags frozen steamable cauliflower rice
- ⅓ cup 64g Lakanto Golden Monk Fruit Sweetener
- 3 tbsp 45mL hot sauce
- 2 tbsp 30mL apple cider vinegar
- 1 tbsp 15mL chili oil
- 1 tbsp 15mL coconut aminos
- 1 tsp garlic powder
- ½ tsp ground ginger
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes
- 1 tbsp avocado oil
- 1 lb ground chicken
Optional Garnishes (Not Included In Nutrition Information):
- 1 tbsp finely chopped green onions
- 1 ½ tsp plain sesame seeds or black sesame seeds
- Pinch of salt
- Pinch of pepper
Instructions
- Cook cauliflower rice in microwave according to bag instructions.
- In a mixing bowl, whisk together monk fruit sweetener, hot sauce, apple cider vinegar, chili oil, coconut aminos, and spices until well-combined. Set aside.
- In a pan over medium heat, heat avocado oil. Once hot, add ground chicken and cook until chicken has cooked through. Stir in prepared sauce and allow sauce to simmer for 1-2 minutes to thicken.
- Spoon steamed cauliflower rice into meal prep containers then spoon on ground chicken. Garnish with sesame seeds and green onions. Optionally, sprinkle on additional salt and pepper, based on your taste preferences.
- Allow ingredients to cool before closing containers with a lid. Transfer to refrigerator. When ready to eat, microwave until warmed throughout, about 1-2 minute(s), depending on wattage of microwave.
