90-Second Low-Carb Bread
This 90-Second Low-Carb Bread is made in a bowl in the microwave with ground sunflower seed meal instead of almond flour, so it works if you are avoiding nuts. Eat it on its own, buttered and toasted, or split it as a bun for a burger or sandwich.

- 2 tbsp 1 oz unsalted butter
- 3 tbsp 21g ground sunflower seed meal
- ½ tsp ground flax seeds
- ½ tsp gluten-free baking powder
- 1 pinch salt
- 1 egg
Melt butter in a shallow ceramic bowl, about 30-45 seconds.
In a small mixing bowl, whisk together ground sunflower seed meal, ground flax seeds, baking powder, and salt. Pour dry ingredient mixture into melted butter and whisk together. Add egg and whisk again. Using a rubber spatula, spread mixture into even layer.
Transfer bowl to microwave and microwave on high for 90 seconds.
After cooking, allow to cool slightly before, using a knife, loosening edges of bread from bowl. Then, flip bowl upside down so bread can fall out. Using a serrated knife, slice into 2 pieces and then transfer slices to toaster to toast until golden brown. Serve on its own, spread butter on top, or use as a bun for a sandwich or burger.
Butter Substitution: Coconut oil, ghee, or avocado oil will work here at a 1:1 substitution ratio. To make this is a dairy-free recipe, use coconut oil or avocado oil.
Ground Sunflower Seed Meal Substitution: You can substitute almond flour in at a 1:1 ratio.
