Sausage Breakfast Casserole

Description

This Sausage Breakfast Casserole features ground Italian sausage, eggs, and shredded cheese and is ready in 50 minutes. It stores well and is a great choice for meal prepping for breakfasts on busy weekdays. It’s protein-packed, flavorful, filling, and perfect for family breakfasts!


Ingredients

  • 1 pound ground Italian sausage
  • 8 large eggs
  • 1 cup (112 grams) shredded sharp cheddar cheese
  • 1/2 cup (56 grams) shredded mozzarella cheese
  • 1/2 cup (120 milliliters) heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Optional Garnish:

  • 1 Tablespoon finely chopped fresh chives


Instructions

  1. Preheat Oven and Prep Baking Dish: Preheat oven to 400 degrees F and coat a 9×13-inch baking dish with nonstick cooking spray.
  2. Cook Sausage: To a large pan over medium-high heat, add sausage and break apart with a wooden spoon. Cook sausage until browned, about 5 minutes. Remove pan from heat and, using a slotted spoon, transfer browned sausage to a prepared baking dish and set aside. (Alternatively, carefully drain grease into a jar or container and then pour browned sausage into baking dish.)
  3. Prepare Egg Mixture: To a large bowl, add eggs, shredded cheddar, shredded mozzarella, heavy cream, salt, and pepper. Using an electric mixer, mix until well-combined. Pour egg mixture atop browned sausage in baking dish.
  4. Bake Casserole: Transfer baking dish to middle oven rack and bake until edges of casserole are golden brown and bubbling, about 30-35 minutes.
  5. Slice and Serve: Remove baking dish from oven and allow casserole to cool slightly before slicing into pieces. Garnish with sprinkle of chopped fresh chives.

Storage: Store the casserole in an airtight container in the refrigerator for up to 3 days.
