Spicy Candied Bacon
Crispy, sweet, and smoky with a slow-building heat, this candied bacon is the kind of thing I make when I want to stop everyone in their tracks at brunch.

- 10 ounces bacon ~8-12 slices, depending on thickness
- ¼ cup + 2 tsp 56g allulose
- ¼-½ teaspoon ground cayenne pepper depending on spice preference (I personally use ¼ tsp)
- ⅛ teaspoon cinnamon
- ⅛ teaspoon ground white pepper
Preheat the oven to 425 degrees. Place wire rack atop baking sheet lined with parchment paper or foil.
In a small bowl, whisk together allulose, cayenne pepper, cinnamon, and pepper.
Arrange bacon slices in even layer atop wire rack. Spoon allulose mixture atop bacon, using back of spoon to spread into an even layer.
Transfer baking sheet to oven and bake until bacon is crispy, about 13-18 minutes, depending on thickness of bacon, rotating baking sheet halfway through to ensure even cooking.
Remove baking sheet from oven and allow to sit at room temperature to fully cool before serving.
