Spicy Candied Bacon

Crispy, sweet, and smoky with a slow-building heat, this candied bacon is the kind of thing I make when I want to stop everyone in their tracks at brunch.

Ingredients

  • 10 ounces bacon ~8-12 slices, depending on thickness
  • ¼ cup + 2 tsp 56g allulose
  • ¼-½ teaspoon ground cayenne pepper depending on spice preference (I personally use ¼ tsp)
  • teaspoon cinnamon
  • teaspoon ground white pepper

Instructions

  • Preheat the oven to 425 degrees. Place wire rack atop baking sheet lined with parchment paper or foil.
  • In a small bowl, whisk together allulose, cayenne pepper, cinnamon, and pepper.
  • Arrange bacon slices in even layer atop wire rack. Spoon allulose mixture atop bacon, using back of spoon to spread into an even layer.
  • Transfer baking sheet to oven and bake until bacon is crispy, about 13-18 minutes, depending on thickness of bacon, rotating baking sheet halfway through to ensure even cooking.
  • Remove baking sheet from oven and allow to sit at room temperature to fully cool before serving.
