- 24 ounce popcorn chicken or crispy boneless chicken bites frozen
- 14 ounce General Tso’s sauce bottle
- 1 cup red bell peppers sliced
- 2 cups fresh broccoli florets
- ½ cup green onions sliced
- 2 tsps white sesame seeds
- 2 cups steamed white rice
Preheat the Oven: Heat the oven to 400 degrees F. Line a large baking sheet with parchment paper, foil, or a silicone mat. Lightly grease it with oil or non-stick spray.
Coat the Chicken: Add the popcorn chicken to a bowl. Pour in about ⅓ of the General Tso's sauce and toss until the chicken is evenly coated.
Prepare the Pan: Spread the red bell peppers and broccoli florets across the baking sheet. Add the coated chicken on top, arranging everything in an even layer so it roasts instead of steaming.
Bake: Place the pan in the oven and bake for 20–22 minutes, flipping the chicken halfway through so it heats evenly and crisps on both sides.
Sauce and Finish: Remove the pan from the oven and immediately drizzle another third of the sauce over the chicken and vegetables. Toss gently to coat.
Garnish and Serve: Top with sliced green onions and sesame seeds. Serve over steamed white rice with the remaining sauce on the side.
Refrigerator Storage: Store in an airtight container in the fridge for up to 4 days.
Freezer Storage: This dish is best enjoyed fresh, but it can be frozen if needed. Freeze cooled leftovers in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheating Instructions: Reheat in a skillet over medium heat until warmed through, stirring occasionally. You can also reheat in the oven at 350 degrees F, covered loosely with foil, to prevent drying out. The microwave works for quick portions, but the chicken will be softer.
Make It Crispier: For crispier chicken after reheating, use the oven or skillet instead of the microwave. A quick broil at the end can help bring back some texture.
Sauce Tip: If the chicken looks dry after reheating, add a small splash of extra General Tso's sauce or a tablespoon of water and toss gently.
