These Roast Beef Sliders are easy sandwiches made with Hawaiian rolls layered with roast beef deli meat, Swiss and cheddar cheese, and horseradish mayo, then finished with a buttery everything bagel seasoning crust. They bake up hot and cheesy with a golden, crisp top and sturdy bottoms that don’t get soggy. Great for game day or busy weeknights.

Ingredients

  • 12-pack Hawaiian dinner rolls sliced in half horizontally with a serrated knife
  • cup mayonnaise
  • 1 Tablespoon prepared horseradish
  • ¾-1 pound roast beef deli meat (medium-rare, if possible)
  • 6 slices Swiss cheese
  • 6 slices white cheddar cheese
  • 4 Tablespoons melted salted butter
  • ½ Tablespoon Worcestershire sauce
  • 2 Tablespoons Everything Bagel Seasoning
  • 1 Tablespoon fresh chopped parsley optional

  • Au jus, extra horseradish mayo spread, Dijon mustard, honey mustard, creamy onion dip

Instructions

  • Preheat and Toast: Preheat oven to 350 °F and lightly grease a 9x13-inch baking dish. Place bottom halves of the 12-pack Hawaiian dinner rolls in the dish and bake 7-8 minutes until lightly toasted.
  • Prepare Spread: Whisk together ⅓ cup mayonnaise and 1 Tablespoon prepared horseradish, then spread evenly over the toasted roll bottoms.
  • Layer Sliders: Add ¾-1 pound roast beef deli meat (medium-rare, if possible). Layer 6 slices Swiss cheese and 6 slices white cheddar cheese on top of roast beef. Cover with the tops of the Hawaiian rolls.
  • Add Topping: In a small bowl, whisk together 4 Tablespoons melted salted butter and ½ Tablespoon Worcestershire sauce. Brush butter mixture over tops and sides of the rolls, then sprinkle with 2 Tablespoons Everything Bagel Seasoning.
  • Bake: Cover with aluminum foil and bake for 20 minutes. After 20 minutes, remove foil and bake 5-10 more minutes until the tops are golden and cheese is melted.
  • Serve: Sprinkle buns with 1 Tablespoon fresh chopped parsley, if desired. Serve warm straight from the dish, either on their own or with dipping sauces such as au jus or extra horseradish mayo.

Notes

Deli Meat Notes: For best results, ask your deli counter for thinly sliced roast beef deli meat (medium-rare, if possible). You'll need about ¾ to 1 pound, depending on how stacked you like your sliders.
Refrigerator Storage: Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, place sliders in a baking dish, cover with foil, and warm in a 350°F oven until heated through. Remove foil for the last 2-3 minutes to crisp the tops.
Freezer Storage: After baking, let sliders cool completely, wrap tightly in aluminum foil, then place in a freezer-safe bag or airtight container. Freeze for up to 2 months. Thaw overnight in the fridge, then reheat covered with foil in a 350°F oven until warmed through, removing foil at the end to crisp the tops.
