- 15 oz 1 ½ bags frozen steamable cauliflower rice
- 1 tbsp avocado oil
- 1 lb ground beef
- ¼ cup + 1 tbsp 75mL low-sodium beef broth
- 3 tbsp 45mL coconut aminos
- 2 ½ tsp ~12g sesame oil
- 1 tsp garlic powder
- ¼ tsp ground ginger
- ¼ tsp red pepper flakes
- ¼ tsp pepper
- ¼ tsp salt
Garnishes:
- ¼ cup shredded carrots
- 3 tbsp finely chopped green onions
- 1 tsp sesame seeds
- Salt and pepper to taste, optional
Cook cauliflower rice in microwave according to bag instructions.
Meanwhile, in a large pan over medium heat, heat avocado oil then add ground beef, break up into pieces, and cook until meat is no longer pink and most of the liquid has evaporated.
While beef cooks, in a small mixing bowl, whisk together beef broth, coconut aminos, sesame oil, and spices until well-combined. Pour mixture atop cooked ground beef in pan, stir, reduce stovetop heat to medium-low and simmer for 2-3 minutes. Remove from heat.
Spoon steamed cauliflower rice into meal prep containers then spoon on ground beef. Garnish with shredded carrots, green onions, and sesame seeds. Optionally, sprinkle on additional salt and pepper, based on your taste preferences.
Allow ingredients to cool before closing containers with a lid. Transfer to refrigerator. When ready to eat, microwave until warmed throughout, about 30 seconds - 1 minute, depending on wattage of microwave.
