Everything Bagel Mini Pepper Boats
Everything Bagel Mini Pepper Boats are mini sweet peppers sliced in half and filled with softened cream cheese, finely shredded cheddar, and salt-free everything bagel seasoning. Crumbled crispy bacon goes over the top, and five peppers make 10 boats in about 15 minutes.

- 3 slices bacon
- 5 mini sweet peppers
- 3 oz cream cheese softened
- ⅓ cup 28g finely shredded cheddar cheese
- 1 tbsp Salt-Free Everything Bagel Seasoning plus 1 tsp more (13g total), divided
In a pan over medium heat, cook bacon until crispy. Transfer to a paper towel-lined plate to de-grease, then crumble into pieces.
Slice peppers in half lengthwise and de-seed.
In a mixing bowl, mix together cream cheese, cheddar cheese, and 1 tbsp seasoning. Spoon and flatten mixture into each individual pepper. Sprinkle on remaining 1 tsp seasoning and crumbled bacon.
Refrigerator
Storage: Store leftover pepper boats in an airtight container in the refrigerator for up to 3 days. The bacon softens as it sits.
Freezer
Storage: I do not recommend freezing these. Raw mini sweet peppers turn limp and watery once they thaw.
Make Ahead: Fill the pepper halves with the cream cheese mixture up to 1 day ahead, cover, and refrigerate. Cook and crumble the bacon ahead too and refrigerate it separately, then sprinkle the bacon and the remaining 1 tsp seasoning over the boats right before serving.
