Ingredients

Chicken

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon Dijon mustard
  • ½ teaspoon black pepper

Sauce

  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon honey
  • ½ tablespoon jarred garlic
  • ½ teaspoon Italian seasoning

Instructions

  • Soak skewers: Soak wooden skewers in water for at least 15 minutes to prevent burning — don't skip this step.
  • Make marinade: In a large bowl, whisk together olive oil, lemon juice, honey, salt, Dijon mustard, black pepper, garlic powder, onion powder, sweet paprika, and cayenne pepper.
  • Marinate chicken: Add the chicken and refrigerate for 15 minutes or up to 2 hours. Any longer and the texture may soften too much from the lemon.
  • Preheat air fryer: Preheat to 375°F as directed by your air fryer manufacturer.
  • Assemble skewers: Thread the chicken onto the soaked skewers and place them in the air fryer basket.
  • Cook: Air fry for 10 minutes, flipping halfway through.
  • Make sauce: While the chicken cooks, stir together melted butter, parmesan cheese, honey, garlic, and Italian seasoning.
  • Finish: Brush the cooked chicken with the sauce, sprinkle with parsley if you like, and serve warm.

Notes

Refrigerator Storage: Store cooked chicken skewers in an airtight container in the refrigerator for up to 3–4 days. Keep the sauce separate if possible to prevent the chicken from getting too soft.
Freezer storage: Flash freeze cooked skewers on a baking sheet for 1 hour, then transfer to a resealable freezer bag. Freeze for up to 3 months.
Reheating Instructions: Reheat in the air fryer for a few minutes until warmed through, or microwave in short bursts. Brush with a little extra sauce if they seem dry after reheating.
Make Ahead: The chicken can be marinated up to 2 hours ahead and kept chilled until ready to cook, which makes prep fast when it’s time to eat. You can also mix the sauce ahead and keep it in the fridge.
