Meatballs and Cauliflower Rice

Ingredients

Cauliflower Rice Ground Beef Shredded Mozzarella Cheese Chopped Fresh Parsley Egg Minced Garlic Coconut Aminos Italian Seasoning Onion Powder Salt Pepper Unsalted Butter Unsalted Chicken Stock Hot Sauce Red Pepper Flakes

Microwave steamable cauliflower rice according to the bag instructions.

Add meatball ingredients to a bowl before mixing together.

Form that mixture into equal-sized balls then place each on a parchment paper-lined plate.

Cook the meatballs in a pan until golden brown on all sides.

Scrape up any browned bits from the bottom of the pan. Then, melt some butter before adding chicken stock, hot sauce, and red pepper flakes. Simmer the sauce until thickened.

Spoon the cauliflower rice into meal prep containers before adding in the meatballs. Then, drizzle the sauce atop the meatballs before garnishing with parsley.

Store the containers in the refrigerator until you’re ready to eat, then microwave to reheat.
