Start by baking your bacon in the oven.

Slice your zucchinis in half, de-seed them, then cut them into pieces.

Transfer the zucchini to a baking sheet, toss with oil, then season.

Chop the cooked bacon into pieces.

Bake the zucchini until slightly tender. Then, remove them from the oven and fill each zucchini boat with chopped bacon and shredded cheese before returning them to the oven to finish baking.

Garnish the baked zucchini boats with a dollop of sour cream and green onions, then serve and enjoy!
