Ingredients

Chicken Thighs Full-Fat Greek Yogurt Garlic Cloves Ginger Ground Turmeric Garam Masala Ground Cumin Salt Lemon Juice Unsalted Butter Yellow Onion Ground Coriander Tomatoes Chili Powder Golden Monk Fruit Sweetener Heavy Whipping Cream Fresh Parsley

Mix the marinade ingredients together. Then, add your cubed chicken before covering the bowl with a lid and letting the chicken marinate for at least 30 minutes, or, if possible, overnight.

Select the Sauté setting on your Instant Pot and select medium heat. Once the display says “hot,” add butter and stir to coat the bottom of the pot. Add the marinated chicken thighs and onion and cook for about 3-4 minutes to sear. Then, select Cancel setting on your Instant Pot.

Excluding the heavy cream, add all of the remaining sauce ingredients and stir to combine. Then, screw on your Instant Pot's lid, and select the Manual setting. Cook for 10 minutes before quick releasing the pressure.

Transfer the cooked chicken to a bowl then, using an immersion blender, pulse the sauce until smooth or transfer the sauce from the Instant Pot pot to a blender then pour the blended sauce back into the Instant Pot. Select the Sauté setting, select medium heat, pour in heavy cream, and cook until the sauce has thickened. Then, add the chicken back in.

Serve the butter chicken with chopped fresh parsley on its own or atop steamed cauliflower rice.
