In a large skillet, cook chopped bacon until crispy.
To a large mixing bowl,whisk eggs, salt, andpepper until combined.
Add bacon, frozen hash browns, shredded cheddar, cottage cheese, and any optional ingredients.Stir until well combined.
Pour the mixture in the baking dish and spreadit out evenly.
Sprinkle a little more shredded cheddar on top if desired.
Bake the casserole for about an hour or until it's set and lightly golden brown. Optionally, broil it for a minute but watch carefully to avoid burning.
Allow the casserole to cool for a few minutes before garnishing it with green onions or chives, then serve.
