Breakfast Muffins

Ingredients

All-Purpose Flour Baking Powder Salt Eggs Full-Fat Cottage Cheese Shredded Cheddar Cheese Avocado Oil Diced Vegetables Bacon or Sausage Herbs or Spices

Whisk together flour, baking powder, and salt in a mixing bowl.

In a separate bowl, whisk the eggs, cottage cheese, shredded cheese, and oil until well combined.

Gradually add the dry ingredients to the bowl of wet ingredients until combined. Fold in any optional add-ins at this point.

Spoon the mixture into the muffin pan, filling each cup about halfway full.

Bake the muffins until they are cooked through, which should take about 18-20 minutes.

Allow the muffins to cool in the baking cups for a few minutes before serving or storing them for later.
