To a food processor or blender, add feta cheese, cream cheese, olive oil, and lemon zest.
Blend the ingredients until smooth. If needed, scrape the mixture down from the sides and then blend again. If you want the dip to be thinner, add more olive oil.
Transfer the whipped feta to a serving dish. Arrange the dip around the outside of the dish and leavea hole in the middle.
Pour the honey in the middle, then garnish with pepper, chives, and fresh herbs.
Serve with pita bread, crackers, vegetables,or bread.
