Breakfast Casserole

Ingredients

Bacon Slices Eggs Salt Pepper Shredded Hash Browns Sharp Cheddar Cheese Cottage Cheese Onions Red Bell Peppers Green Onions or Chives

In a large skillet, cook chopped bacon until crispy.

To a large mixing bowl, whisk eggs, salt, and pepper until combined.

Add bacon, frozen hash browns, shredded cheddar, cottage cheese, and any optional ingredients. Stir until well combined.

Pour the mixture in the baking dish and spread it out evenly.

Sprinkle a little more shredded cheddar on top if desired.

Bake the casserole for about an hour or until it's set and lightly golden brown. Optionally, broil it for a minute but watch carefully to avoid burning.

Allow the casserole to cool for a few minutes before garnishing it with green onions or chives, then serve.
