Low-Carb Creamy Spinach

Ingredients

• Chicken Thighs • Avocado Oil • Minced Garlic Italian Seasoning Black Pepper Salt Paprika Red Pepper Flakes Cream Cheese Fresh Spinach Shredded Mozzarella Cheese Black Pepper

To a freezer bag, add chicken,  avocado oil, minced garlic, and spices. Seal the bag and massage the mixture into the chicken until the marinade ingredients are combined. Transfer the bag to the refrigerator to marinate.

Coat a baking pan with nonstick cooking spray. Preheat the oven and then, in a pan on the stovetop, heat some avocado oil. Add spinach and allow it to wilt and for excess liquid to cook off then set it aside.

Unseal the bag of marinating chicken and, using some tongs, transfer the marinated chicken thighs to the prepared baking pan.

Using a knife, spread some softened cream cheese atop the marinated chicken thighs.

And then, using a pair of tongs, lay the wilted spinach atop the cream cheese.

Sprinkle some shredded mozzarella cheese on top.

Transfer the baking pan to the oven to bake until the chicken has reached an internal temperature of 165 degrees, about 20-22 minutes.

Remove the pan from the oven, sprinkle with pepper and paprika, and serve.
