Description

This Meal Prep Firecracker Ground Chicken is served with cauliflower rice and is a delicious low-carb recipe that can be prepared in less than 30 minutes. Made with ingredients like ground chicken, chili oil, monk fruit sweetener, and hot sauce, each bite is bursting with savory, sweet, and spicy flavor!

Instructions

  1. Cook cauliflower rice in microwave according to bag instructions.
  2. In a mixing bowl, whisk together monk fruit sweetener, hot sauce, apple cider vinegar, chili oil, coconut aminos, and spices until well-combined. Set aside.
  3. In a pan over medium heat, heat avocado oil. Once hot, add ground chicken and cook until chicken has cooked through. Stir in prepared sauce and allow sauce to simmer for 1-2 minutes to thicken.
  4. Spoon steamed cauliflower rice into meal prep containers then spoon on ground chicken. Garnish with sesame seeds and green onions. Optionally, sprinkle on additional salt and pepper, based on your taste preferences.
  5. Allow ingredients to cool before closing containers with a lid. Transfer to refrigerator. When ready to eat, microwave until warmed throughout, about 1-2 minute(s), depending on wattage of microwave.
