Low Carb Greek Salad Meal Prep Jars

Description

This low carb Greek salad meal prep jar recipe is the perfect meal solution for those that are busy and always on-the-go and just want a quick and SIMPLE meal! From start to finish, this keto-friendly recipe takes only 10 minutes to prep and serve!


Ingredients

Salad:

  • 1 cucumber (~350g)
  • 150g (~1 cup) chopped tomatoes
  • 1/3 cup (60g) chopped green pepper, de-seeded
  • 1/4 cup (15g) red onion, thinly sliced 
  • 12 kalamata olives (90g), pitted and halved
  • 60g feta cheese

Dressing:


Instructions

  1. Salad: Cut cucumber into quarters, yielding 4 total pieces. Using a spoon, scoop out and discard cucumber seeds. Chop cucumber into small cubes, roughly 1/2-inch pieces.
  2. Dressing: In a small bowl, mix all the dressing ingredients together.
  3. Final Steps: Place your meal prep jars on a flat surface. In each jar, add layers of cucumber, green pepper, tomatoes, onion, and olives. Drizzle dressing and sprinkle feta cheese atop ingredients. Repeat process so you have 2 layers of each ingredient in each jar. Optionally, in a large mixing bowl, mix all salad ingredients together, drizzle dressing atop ingredients, then transfer equal portions of mixed salad into individual glass jars.
  4. Seal jars with the lids and store in the refrigerator for up to 2 days.

Recipe Notes:

For A Dairy-Free, Paleo, and Whole30 Recipe: Simply omit the feta cheese for a dairy-free salad.

Meal Prep: I love to make these Low Carb Greek Salad Meal Prep Jars the night before and enjoy the next day. The flavors infuse together and then cucumber is still nice and crunchy. Store sealed jars in the refrigerator overnight.

Serving Options: Serve with your favorite source of protein, like Keto Meatballs or Lemon Pepper Chicken Wings. Top each salad jar with chopped fresh oregano for an extra burst of flavor!

Storage: Seal jars with the lids and store in the refrigerator for up to 2 days.
